Shrimp With Bok Choy and Corn

Shrimp With Bok Choy and Corn Recipe
Ingredients
2 tablespoons soy sauce (wheat free tamari)
1 tablespoon rice wine vinegar
1 teaspoon brown sugar
4 teaspoons of canola or vegetable oil
1 1/2 lbs of baby bok choy, cut into 1 inch pieces
1 lb of shrimp, peeled and deveined
2 tablespoons ginger, finely chopped
3 cloves garlic, finely chopped
1 can (15 ounces) baby corn, rinsed and drained
2 tablespoons sesame seeds toasted
Directions
1. In a small bowl, whisk together, soy sauce, rice wine vinegar and sugar in a small bowl. Set aside.
2. Heat oil in a wok or large non-stick skillet over medium high heat. Stir fry the bok choy for 2-3 minutes. Add shrimp, ginger, baby corn, garlic and stir fry for 1 minute. Add soy sauce mixture (from step 1) and continue to stir fry until shrimp is cook (do not overcook the shrimp). Garnish with toasted sesame seeds. Serve immediate with rice.

This looks delicious and I never knew that shrimp, bok choy and corn were sleep inducing. I’m going to make this for my hubby who often has this problem. I’ll need to use a gluten free tamari so we can eat it. Thank you for sharing this on Friday Foodie Fix!

This recipe was entered as a gluten-free recipe on the Whole Gang’s blog, but regular soy sauce is not gluten-free. You might change the recipe to have “wheat-free tamari” instead.
